Hello: Can I safely backup and remove the C:\windows.old files? And if so, how do I change to boot prompt to no longer ask me if I want to boot into windows.old?

Yes, you can do that. To remove windows.old go to 'start' and in the search field type 'clean' and press enter. Disk Cleanup should now appear, which will give you the possibility to remove windows.old.
