When Windows Mail is closed, does it still automatically check for new mail (if set up that way) like Outlook did when it was minimized to the system tray ? Also, can Windows Mail be minimized in that way ?

No, it can'tbe minimized to the Notification Area which is the proper name according to the Shell Team..
And no, it can't check mail when it's closed, remember, Outlook was still running as it was minimized to the Notification Area.
